How to Make Yogurt

Fermented foods are a hot health topic – and for good reasons. These foods are rich in probiotics and populate our good bacteria – particularly those in our gut. Studies even show that they may improve digestion, boost immunity and help us maintain a healthy weight. We taught a class on how easy it is to make sourdough bread, yogurt and sauerkraut for yourself. This article focuses on making yogurt.

First, it’s important to understand why someone would want to ferment grains, or anything for that matter. Check out our short introduction video about why fermenting is important for our health.

Ingredients

½ gallon milk

½ cup yogurt (store bought or saved from a previous batch)

Instructions

Pour milk in crock pot and turn on low for approximately 2 ½ hours (milk should reach a temperature of 180°F). Turn crock pot off for 2 ½ hours (milk should return to a temperature of 120°). Whisk in ½ cup of yogurt, cover and wrap crock pot in a large bathroom towel. Let sit on your counter for 8 hours. Then refrigerate the crock pot crock (with yogurt) for 12-24 hours before eating (this will help it thicken).
